I enjoy creating my own dressings because they are more nutritious and delicious. Pomegranate vinaigrette is tangy, fruity, and naturally free of dairy and gluten. Pomegranate juice provides antioxidants for heart health, while extra virgin olive oil adds a creamy texture and anti-inflammatory omega-3s. Olive oil, like pomegranate, is beneficial for heart health.
To balance the richness of olive oil, I include apple cider vinegar for tanginess and gut health benefits. Dijon mustard adds a slight sharpness, while honey or maple syrup sweetens the dressing naturally.
I incorporate fresh herbs from my garden for added antioxidants. Dried herbs can be substituted for fresh if needed.
